Three Food Mavericks Venture Into the Heart of Billings
Billings is buzzing with the news that Jessica May, Joshua Ploeg, and Nicholas Rogers are embarking on a culinary adventure by launching their very own restaurant, Earthbound Cafe.
Soon to open their restaurant beneath the Valley Credit Union at 207 North Broadway, the trio aims to breathe new life into the local food scene with eclectic cuisine and a vibrant dining space.
A Menu for All Palates
Diners at Earthbound Cafe can expect a menu that caters to a wide range of preferences, including many vegan and vegetarian options as well as dishes tailored for special dietary needs. With a mid-March opening on the horizon, the team is working hard to open while also raising funds to cover various essentials for the restaurant's success.
Meet the People Behind Earthbound Cafe
Jessica May: With a culinary journey that began at the tender age of 15, Jessica's experience spans from the kitchen to the front of the house. After taking a hiatus to raise her children, she jumped feet first back into the world of food in various forms before resuming her foray into the restaurant scene.
Joshua Ploeg: Armed with two decades of experience in hosting dinner parties and special culinary events across the United States and beyond, Joshua brings a wealth of expertise to Earthbound Cafe. An accomplished author of several cookbooks and a veteran of the punk music scene on the West Coast, Ploeg will bring creative flair and a passion for plant-based cuisine.
Nicholas Rogers: With over 17 years in the restaurant industry, Nicholas is a seasoned professional who has honed his skills across various roles within the culinary realm. His recent venture into baking for local farmers markets, alongside Joshua and Jessica, will help showcase the best of farm-fresh ingredients and artisanal creations at Earthbound Cafe.

As they gear up for their grand opening, Jessica, Joshua, and Nicholas are eager to carve out a unique culinary destination that celebrates creativity, sustainability, and community connections in the heart of downtown Billings. If you would like to help contribute to their venture, the trio have set up a GoFundMe fundraiser here.
